'outbreak' is usually used for sickness "outbreak of Cholera" "outbreak of flu" ..or can be used with war "outbreak of war between 2 countries" ..it's usually something negative that can't be controlled therefore it doesn't really suit your sentence. Do you mean 'dramatic increase in junk food'? "explosion in the number of junk food providers"?
